- 1 tbsp strong espresso powder (mocha brigadeiro)

Instructions

- Cook over medium-low heat, stirring CONSTANTLY with a wooden spoon or silicone spatula. This step cannot be rushed and cannot be neglected — brigadeiro burns easily if left unattended for even a moment.
- Continue stirring and cooking for 10-15 minutes. The mixture will gradually thicken and pull away from the sides of the pan. Test for doneness: drag your spatula across the bottom of the pan — the channel should hold its shape for 2-3 seconds before the mixture flows back together. Another test: a small amount dropped onto a cold plate should hold its shape without spreading.
- Remove from heat immediately. Stir in vanilla extract if using. Pour onto a lightly buttered plate or bowl. Let cool completely to room temperature, then refrigerate for at least 2 hours until firm enough to roll.
- Spread the chocolate sprinkles in a shallow bowl or on a plate.
- With clean, buttered hands, scoop about 1 tablespoon of the cold mixture and roll quickly between your palms into a smooth ball. Work fast — the heat of your hands will soften the mixture. Roll immediately in the sprinkles to coat thoroughly.
- Place each finished brigadeiro in a petit four cup. The little cup is not decorative — it is traditional and makes them easier to hold and eat.
- Refrigerate until ready to serve, up to 3 days. Brigadeiro is Brazil's most beloved sweet, served at every birthday party, wedding, and celebration. Made from only four ingredients, it is proof that simplicity and perfection are not opposites.
