Aperol Spritz with Blood Orange and Fresh Thyme

Ingredients

  • 3 oz prosecco
  • 2 oz Aperol
  • 1 oz fresh blood orange juice
  • 1 oz club soda
  • Ice (large cubes preferred)
  • 2-3 fresh thyme sprigs
  • Blood orange half-wheel for garnish
  • Castelvetrano olive for garnish (optional, traditional)

Instructions

  1. Lightly bruise one thyme sprig by clapping it between your palms to release the oils.
  2. Fill a large wine glass or balloon glass with ice cubes.
  3. Pour Aperol directly over the ice.
  4. Add fresh blood orange juice.
  5. Pour prosecco gently down the side of the glass to preserve the bubbles.
  6. Top with a splash of club soda and stir once very gently.
  7. Garnish with a blood orange half-wheel, the bruised thyme sprig, and an olive if desired. Serve immediately.
