Ingredients
- 3 oz prosecco
- 2 oz Aperol
- 1 oz fresh blood orange juice
- 1 oz club soda
- Ice (large cubes preferred)
- 2-3 fresh thyme sprigs
- Blood orange half-wheel for garnish
- Castelvetrano olive for garnish (optional, traditional)
Instructions
- Lightly bruise one thyme sprig by clapping it between your palms to release the oils.
- Fill a large wine glass or balloon glass with ice cubes.
- Pour Aperol directly over the ice.
- Add fresh blood orange juice.
- Pour prosecco gently down the side of the glass to preserve the bubbles.
- Top with a splash of club soda and stir once very gently.
- Garnish with a blood orange half-wheel, the bruised thyme sprig, and an olive if desired. Serve immediately.
