Ingredients
- 2 large English cucumbers, roughly chopped (skin on)
- 1/2 cup fresh lime juice (about 4 limes)
- 3 cups cold water
- 3 tbsp honey or agave syrup (adjust to taste)
- 1 cup fresh mint leaves, loosely packed
- Pinch of fine sea salt
- Ice cubes
- Cucumber ribbons (peeled with a vegetable peeler) for garnish
- Fresh mint sprigs and lime wheels for garnish
- Pinch of Tajin or chili-lime salt on rim (optional)
Instructions
- Blend chopped cucumber with cold water on high until completely smooth, about 60 seconds.
- Add mint leaves, lime juice, honey, and sea salt to the blender. Blend another 30 seconds.
- Strain through a fine-mesh sieve into a large pitcher, pressing solids with a spoon to extract maximum liquid. Discard pulp.
- Taste and adjust: add more honey for sweetness or more lime for brightness. Stir well.
- Refrigerate at least 20 minutes until very cold.
- If desired, run a lime wedge around glass rims and dip in Tajin for a spicy-salty edge.
- Pour over ice into chilled glasses. Garnish each with a cucumber ribbon, fresh mint sprig, and lime wheel.
