Ingredients
- 3 oz Aperol
- 3 oz Prosecco, chilled
- 1 oz fresh blood orange juice
- 1 oz club soda
- 1 sprig fresh rosemary
- Ice (large cubes)
- Blood orange half-wheel for garnish
- Rosemary sprig for garnish
- Pinch of flaky salt
Instructions
- Lightly bruise the rosemary sprig by pressing it between your palms or snapping it in half to release the oils.
- Fill a large wine glass generously with ice cubes.
- Pour blood orange juice over the ice first — this sinks to the bottom for a beautiful gradient.
- Add Aperol over the juice.
- Pour chilled Prosecco slowly down the side of the glass to preserve the bubbles.
- Add a splash of club soda. Tuck the bruised rosemary sprig into the glass alongside the ice.
- Garnish with a blood orange half-wheel on the rim and a pinch of flaky salt on top to brighten the citrus. Serve immediately.
