Italian Blood Orange Aperol Spritz with Rosemary and Prosecco

Ingredients

  • 3 oz Aperol
  • 3 oz Prosecco, chilled
  • 1 oz fresh blood orange juice
  • 1 oz club soda
  • 1 sprig fresh rosemary
  • Ice (large cubes)
  • Blood orange half-wheel for garnish
  • Rosemary sprig for garnish
  • Pinch of flaky salt

Instructions

  1. Lightly bruise the rosemary sprig by pressing it between your palms or snapping it in half to release the oils.
  2. Fill a large wine glass generously with ice cubes.
  3. Pour blood orange juice over the ice first — this sinks to the bottom for a beautiful gradient.
  4. Add Aperol over the juice.
  5. Pour chilled Prosecco slowly down the side of the glass to preserve the bubbles.
  6. Add a splash of club soda. Tuck the bruised rosemary sprig into the glass alongside the ice.
  7. Garnish with a blood orange half-wheel on the rim and a pinch of flaky salt on top to brighten the citrus. Serve immediately.
