Mediterranean Grilled Halloumi Wrap

Ingredients

  • 8 oz halloumi cheese, sliced 1/4 inch thick
  • 2 large flour tortillas
  • 1 cup mixed greens
  • 1/2 cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup kalamata olives, sliced
  • 2 tbsp hummus
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Fresh mint leaves
  • Za'atar seasoning

Instructions

  1. Pat halloumi dry and brush both sides with olive oil. Sprinkle with za'atar.
  2. Grill halloumi on high heat for 2 minutes per side until golden char marks appear.
  3. Warm tortillas on the grill for 30 seconds each side.
  4. Spread hummus generously down the center of each tortilla.
  5. Layer grilled halloumi, mixed greens, cucumber, tomatoes, red onion, and olives.
  6. Drizzle with lemon juice, scatter fresh mint, and wrap tightly. Slice in half on the diagonal.
