Peach Basil Fizz with Honey and Lemon

Ingredients

  • 2 ripe peaches, pitted and roughly chopped
  • 2 oz vodka or gin
  • 3/4 oz fresh lemon juice
  • 3/4 oz honey syrup (1:1 honey and warm water)
  • 6 fresh basil leaves plus sprigs for garnish
  • 2 oz prosecco or sparkling water for topping
  • Ice
  • Peach slice and basil sprig for garnish
  • Pinch of flaky salt

Instructions

  1. Make honey syrup: stir equal parts honey and warm water until dissolved. Let cool.
  2. Muddle basil leaves gently in a cocktail shaker — 3-4 presses only, to release aroma without bitterness.
  3. Add chopped peach to the shaker and muddle until juicy.
  4. Add vodka, lemon juice, and honey syrup. Fill with ice.
  5. Shake vigorously for 15 seconds until very cold.
  6. Double-strain through a fine-mesh sieve into a tall ice-filled glass to remove peach pulp and basil bits.
  7. Top slowly with prosecco or sparkling water. Add a pinch of flaky salt. Garnish with a fresh peach slice and basil sprig.
