Ingredients
- 2 ripe peaches, pitted and roughly chopped
- 2 oz vodka or gin
- 3/4 oz fresh lemon juice
- 3/4 oz honey syrup (1:1 honey and warm water)
- 6 fresh basil leaves plus sprigs for garnish
- 2 oz prosecco or sparkling water for topping
- Ice
- Peach slice and basil sprig for garnish
- Pinch of flaky salt
Instructions
- Make honey syrup: stir equal parts honey and warm water until dissolved. Let cool.
- Muddle basil leaves gently in a cocktail shaker — 3-4 presses only, to release aroma without bitterness.
- Add chopped peach to the shaker and muddle until juicy.
- Add vodka, lemon juice, and honey syrup. Fill with ice.
- Shake vigorously for 15 seconds until very cold.
- Double-strain through a fine-mesh sieve into a tall ice-filled glass to remove peach pulp and basil bits.
- Top slowly with prosecco or sparkling water. Add a pinch of flaky salt. Garnish with a fresh peach slice and basil sprig.
