- 4 oz bourbon
- Club soda, to top

Instructions
- Add the peach slices, mint leaves and simple syrup to a shaker and gently muddle to release the juices and oils.
- Pour in the lemon juice and bourbon and fill the shaker with ice.
- Shake hard for about 15 seconds until well chilled.
- Strain into two rocks glasses filled with fresh ice.
- Top each with a splash of club soda for a little lift.
- Garnish with a peach slice and a slapped mint sprig to wake up the aroma.
