Build a campfire and let it burn down to a bed of even, glowing coals.
Serves 4
Ingredients
- 4 ripe bananas, unpeeled
- 1/2 cup semisweet chocolate chips
- 1 cup mini marshmallows
- 1/3 cup crushed graham crackers
- 1/4 cup chopped toasted pecans
- 2 tbsp caramel sauce
- 1/4 tsp flaky sea salt
- 4 squares of heavy-duty foil
Instructions
- Build a campfire and let it burn down to a bed of even, glowing coals.
- Leaving each banana in its peel, slice lengthwise through the inner curve without cutting through the bottom, then gently press the ends to open a pocket.
- Stuff the pockets with chocolate chips, mini marshmallows, crushed graham crackers and pecans, packing them in generously.
- Wrap each banana snugly in foil, leaving the slit facing up.
- Nestle the foil packets directly on the coals or on a grate over the fire and cook until the banana is soft and the chocolate and marshmallows are melted, about 8 to 10 minutes.
- Carefully unwrap the tops, watching for steam, and drizzle with caramel sauce.
- Finish with a pinch of flaky salt and eat straight from the peel with a spoon while everything is hot and gooey.
- The banana boat is a beloved fixture of American summer camps and backyard fire pits, a no-skillet dessert that turns a single banana into a molten sundae using nothing but foil and embers. Endlessly customizable and impossible to get wrong, it is the sort of sticky, communal treat that keeps everyone gathered around the dying fire long after the marshmallow bag is empty.
