Set a cast-iron skillet over campfire coals or a grill at medium heat, or use a 400F oven.
Serves 6
Ingredients
- 10 oz dark chocolate chips (about 1.5 cups)
- 2 tbsp heavy cream
- 1 tbsp unsalted butter
- 1/2 tsp vanilla extract
- Pinch of flaky sea salt
- 12 large marshmallows, halved
- 1 tbsp bourbon (optional, for the grown-ups)
- Graham crackers, for dipping
- Sliced strawberries and banana, for dipping
- Pretzel sticks, for dipping
Instructions
- Set a cast-iron skillet over campfire coals or a grill at medium heat, or use a 400F oven.
- Add the chocolate chips, heavy cream and butter to the skillet and let them begin to melt, stirring gently as they soften.
- Stir in the vanilla, the optional bourbon and a pinch of flaky salt until the chocolate is glossy and smooth.
- Arrange the halved marshmallows cut-side down in a tight single layer over the warm chocolate.
- Move the skillet closer to the fire, or pass a kitchen torch over the top, until the marshmallows puff and turn deep golden-brown and toasty.
- Pull the skillet off the heat while the center is still molten — it keeps cooking from residual warmth.
- Set the hot skillet on a board in the middle of the table surrounded by graham crackers, fruit and pretzels for dipping.
- Eat immediately, while the marshmallow stretches into long sticky ribbons.
- S'mores are the campfire's most cherished ritual, a sticky-sweet tradition first printed in a 1927 Girl Scout handbook and beloved at American cookouts ever since. Reimagined as a shared skillet dip, it skips the fumbling with sticks and turns dessert into a communal, fireside event — a fittingly playful, hands-in-the-middle finale to a Father's Day cookout.
