Smoked Maple Bourbon Old Fashioned with Charred Orange and Bitters

If smoking the drink, trap a puff of wood smoke under an inverted rocks glass for 30 seconds, then turn it upright to hold the aroma.

Ingredients

  • 2 oz bourbon whiskey
  • 1 tsp pure maple syrup
  • 2 dashes Angostura bitters
  • 1 dash orange bitters
  • 1 large ice cube
  • 1 strip orange peel, charred
  • 1 brandied cherry, to garnish
  • Optional: wood smoke from a smoking gun or torched cinnamon stick

Instructions

  1. If smoking the drink, trap a puff of wood smoke under an inverted rocks glass for 30 seconds, then turn it upright to hold the aroma.
  2. Add the maple syrup, Angostura bitters and orange bitters to the glass.
  3. Pour in the bourbon and stir briefly to combine.
  4. Add one large clear ice cube and stir gently for 20-30 seconds to chill and lightly dilute.
  5. Hold the orange peel over a flame for a few seconds until it just chars and the oils blister, then twist it over the surface to express the oils and drop it in.
  6. Garnish with a brandied cherry.
  7. Serve straight away, ideally with the first sip taken through the lingering wisp of smoke.
  8. The Old Fashioned is the original cocktail — spirit, sugar, bitters and ice, first defined in the early 1800s and unchanged in spirit ever since.
