Lebanese Grilled Chicken Wings with Garlic Toum and Sumac

Ingredients

  • 3 lbs chicken wings, split into flats and drumettes
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 6 cloves garlic, minced
  • 1 tbsp ground sumac, plus more to finish
  • 2 tsp ground allspice
  • 1 tsp ground cinnamon
  • 1.5 tsp salt
  • 1 tsp black pepper
  • For the toum: 4 garlic cloves, 1/2 tsp salt, 1 cup neutral oil, 2 tbsp lemon juice, 1 tbsp ice water
  • Chopped parsley and lemon wedges, to serve

Instructions

  1. Whisk the olive oil, lemon juice, garlic, sumac, allspice, cinnamon, salt and pepper into a marinade and toss the wings to coat. Marinate at least 2 hours or overnight.
  2. Make the toum: blend the garlic and salt to a paste, then with the blender running drizzle in the oil in a very thin, steady stream, alternating with the lemon juice, until it whips into a thick, fluffy white emulsion. Loosen with the ice water and chill.
  3. Heat a grill to medium; you want steady heat, not roaring flames, so the wings cook through before the skin burns.
  4. Grill the wings 18-22 minutes total, turning every 5 minutes, until the skin is deeply charred and crisp and the juices run clear.
  5. Move any flare-prone wings to a cooler part of the grill so the spice crust stays dark, not bitter.
  6. Pile the wings on a platter, dust with extra sumac and scatter with parsley.
  7. Serve hot with the garlic toum for dipping and lemon wedges for squeezing.
