- 1 lb large shrimp, peeled and deveined
- 2 ears fresh corn, kernels removed (about 1 1/2 cups)
- 1 red bell pepper, cut into 1-inch pieces
- 1 small red onion, cut into wedges

- 1 tsp ground cumin
- 2 tbsp olive oil
- 1 tbsp lime juice
- 1 tsp honey
- Salt and freshly ground black pepper, to taste
- 8 wooden skewers, soaked in water 30 minutes
- 2 cups shredded red cabbage
- 1/4 cup chopped fresh cilantro
- 2 tbsp lime juice (for slaw)

- 1 tbsp mayonnaise
Instructions
- In a large bowl combine the chipotle chili powder, smoked paprika, cumin, olive oil, lime juice, honey, salt and pepper and whisk to a smooth marinade.
- Add the shrimp, corn kernels, red bell pepper and onion to the bowl and toss until evenly coated. Let marinate at room temperature for 15 minutes.
- While the shrimp marinate, make the slaw: whisk together the lime juice, honey, mayonnaise, chopped cilantro and a pinch of salt, then fold in the shredded cabbage until coated. Refrigerate until serving.
- Thread the shrimp, corn, bell pepper and onion onto the soaked skewers, alternating for color and balance.
