Frozen Watermelon Mint Agua Fresca with Fresh Lime

Freeze the watermelon cubes on a tray for at least 4 hours until solid.

Ingredients

  • 8 cups seedless watermelon, cubed and frozen
  • 1/2 cup fresh lime juice
  • 1/3 cup honey or agave syrup
  • 1 cup cold water
  • A handful of fresh mint leaves
  • 1/2 tsp flaky salt
  • 2 cups ice
  • Lime wheels and mint sprigs, for garnish
  • Tajin seasoning, for rimming the glasses

Instructions

  1. Freeze the watermelon cubes on a tray for at least 4 hours until solid.
  2. Add the frozen watermelon, lime juice, honey, cold water, mint, and salt to a blender.
  3. Blend on high until completely smooth and slushy, adding the ice and a splash more water if needed to loosen.
  4. Taste and adjust with more lime or honey depending on the sweetness of your watermelon.
  5. Rim chilled glasses with a little lime juice and Tajin seasoning for a tangy edge.
  6. Pour the frozen agua fresca into the glasses, garnish with lime wheels and mint sprigs, and serve immediately with straws.
