Grilled Pineapple Mojito with Charred Lime and Mint

Heat a grill or grill pan to high. Grill the pineapple rings and lime halves cut-side down until charred and caramelized, about 3 minutes per side; let cool slightly.

Ingredients

  • 4 thick fresh pineapple rings
  • 2 limes, halved
  • 12 fresh mint leaves, plus sprigs to garnish
  • 3 tablespoons sugar or simple syrup
  • 6 oz white rum
  • Crushed ice
  • 12 oz chilled club soda
  • Pinch of salt

Instructions

  1. Heat a grill or grill pan to high. Grill the pineapple rings and lime halves cut-side down until charred and caramelized, about 3 minutes per side; let cool slightly.
  2. Chop two of the grilled pineapple rings and add to a pitcher with the mint leaves and sugar.
  3. Muddle gently to release the juices and mint oils.
  4. Squeeze in the juice from the charred limes and add a small pinch of salt.
  5. Pour in the rum and stir to combine, then strain or leave rustic as you prefer.
  6. Fill glasses with crushed ice, divide the pineapple mixture among them, and top with club soda.
  7. Garnish each glass with a wedge of grilled pineapple and a sprig of mint, and serve immediately.
