Smoked Butter Pecan Breakfast Wrap with Grilled Corn & Avocado

Preheat grill to medium-high and lightly oil the grates.

Ingredients

  • 2 slices sourdough or whole grain wrap
  • 1/2 cup unsalted butter, softened
  • 1/4 cup melted sharp cheddar
  • 1/3 cup slivered almonds or pecans
  • 1/2 cup canned pitted peaches, sliced
  • 1/4 cup diced fresh avocado
  • 1 tablespoon fresh cilantro, chopped
  • 1 teaspoon honey
  • Salt and pepper to taste
  • Optional: lime zest for brightness

Instructions

  1. Preheat grill to medium-high and lightly oil the grates.
  2. Softened the butter and spread a thin layer evenly across the wrap, leaving corners open.
  3. Add melted cheddar and almonds, pressing gently to adhere.
  4. Toss peaches with honey and salt, then scatter on top.
  5. Arrange sliced avocado around the edges and cilantro on the wrap.
  6. Place the wrap on the grill and cook 3-4 minutes per side until the butter melts and the peaches caramelize.
  7. Finish by sprinkling cilantro and optionally garnish with lime zest before serving.
  8. Serve warm or at room temperature with a side of sliced tomatoes or fresh berries.
