Instructions
- Char a lemon half cut-side down on a hot grill until blackened and fragrant; squeeze for 3/4 oz juice.
- Add the bourbon, charred lemon juice, simple syrup, cherry preserves and egg white (if using) to a shaker.
- Dry-shake without ice for 15 seconds to build a foam.
- Add ice and shake hard again until well chilled.
- Strain into a rocks glass over fresh ice.
