Instructions
- Heat a grill or grill pan to medium-high and lightly oil the grates.
- Grill the mango planks until char-marked and softened, about 2-3 minutes per side, then let cool slightly.
- Blend the grilled mango with the honey, lime juice, cardamom, mint leaves, and a pinch of salt until completely smooth.
- Strain the puree through a fine sieve if you prefer a silkier texture, then chill for 15 minutes.
- Fill four tall glasses with ice and divide the mango-lime base among them.
- Top each glass with chilled sparkling water, stir gently, and garnish with a lime wheel and a sprig of fresh mint.
