  • 2 teaspoons baking powder

  • 1 cup canned coconut milk
  • 1 large egg
  • 3 tablespoons melted butter, plus more for the griddle
  • 1 teaspoon vanilla extract
  • 1 cup fresh pineapple, cut into small rings or chunks
  • 1/3 cup shredded coconut, toasted
  • 1/3 cup macadamia nuts, roughly chopped and toasted
  • Maple syrup, for serving

Instructions

  1. Set a cast-iron griddle or skillet over the campfire grate (or a medium camp stove) and let it come to a steady, even heat.
  2. In a bowl, whisk together the flour, sugar, baking powder and salt.
  3. In a second bowl, whisk the coconut milk, egg, melted butter and vanilla until smooth, then fold into the dry ingredients just until combined — lumps are fine.
  4. Rub the hot griddle with a little butter. Lay the pineapple rings down first and char for 1–2 minutes per side until golden, then set aside.
  5. Pour scant 1/4-cup pools of batter onto the griddle. Cook until bubbles form and the edges look set, about 2–3 minutes, then flip and cook 1–2 minutes more.
  6. Stack the pancakes, tuck the charred pineapple between the layers, and scatter with toasted coconut and macadamia nuts.
  7. Finish with a generous pour of warm maple syrup and serve straight from the fire.
