Frozen Brazilian Passion Fruit and Coconut Batida Slush with Lime

Add the passion fruit pulp, cachaca, coconut cream, condensed milk and lime juice to a blender.

Ingredients

  • 1 cup passion fruit pulp (fresh or frozen)
  • 1/2 cup cachaca
  • 1/2 cup coconut cream
  • 1/4 cup sweetened condensed milk
  • 2 tbsp fresh lime juice
  • 3 cups ice cubes
  • 2 tbsp sugar, or to taste
  • Lime wheels, to garnish
  • Toasted coconut flakes, to garnish

Instructions

  1. Add the passion fruit pulp, cachaca, coconut cream, condensed milk and lime juice to a blender.
  2. Add the ice and sugar and blend on high until thick, smooth and slushy.
  3. Taste and adjust with a little more sugar or lime for a bright tropical balance.
  4. If the slush is too thick, add a splash of cold water; if too thin, add a few more ice cubes and pulse.
  5. Run a lime wheel around the rims of 4 chilled glasses.
  6. Pour the frozen batida into the glasses.
  7. Garnish each with a lime wheel and a sprinkle of toasted coconut flakes.
  8. Serve immediately with short straws while frosty.
  9. The batida is Brazil's blended cocktail of choice, mixing cachaca with tropical fruit and creamy coconut. Frozen into a slush and brightened with passion fruit and lime, it captures the beachside energy of a Rio summer in every icy sip.
