Frozen Cuban Mojito with Fresh Mint and Lime

Reserve a few mint leaves for garnish and add the rest to a blender along with the lime juice and simple syrup.

Ingredients

  • 1/2 cup white rum
  • 1/2 cup fresh lime juice (about 4 limes)
  • 1/3 cup simple syrup, or to taste
  • 1 cup packed fresh mint leaves
  • 5 cups ice cubes
  • 1/2 cup club soda
  • Lime wheels, for garnish
  • Extra mint sprigs, for garnish

Instructions

  1. Reserve a few mint leaves for garnish and add the rest to a blender along with the lime juice and simple syrup.
  2. Blend briefly to bruise and release the mint oils into the juice.
  3. Add the rum and ice cubes and blend on high until thick, smooth and slushy.
  4. Taste and add a little more simple syrup if you prefer it sweeter, then pulse in the club soda for a touch of fizz.
  5. Pour into chilled tall glasses.
  6. Garnish each with a lime wheel and a sprig of fresh mint.
  7. Serve immediately with a straw while the slush is still frosty. For a non-alcoholic version, swap the rum for an extra cup of ice and a splash more soda.
