- Juice the grapefruits and strain the juice through a fine-mesh sieve to remove pulp and seeds, then chill it thoroughly — a warm base will melt your ice and produce a watery drink.
- Shake the can of coconut milk well before measuring, or warm it briefly and whisk if the cream has separated and solidified.
- Combine the grapefruit juice, coconut milk, rum, lime juice, cane syrup, nutmeg and salt in a blender.
- Add the ice and blend on high for 45 to 60 seconds, until the mixture is completely smooth and holds the texture of soft snow.
- Taste and adjust — grapefruit varies enormously in sweetness, so add cane syrup a tablespoon at a time until the tartness reads bright rather than sharp.
- If the slush is too loose, add a handful more ice and pulse briefly; if it is too stiff to pour, add a splash of grapefruit juice.
- Rim four tall glasses with toasted coconut flakes by wetting the rims with a lime wedge and pressing them into a shallow plate of coconut.
- Pour the frozen mixture into the prepared glasses and garnish each with a grapefruit wheel and a lime wedge.
- Grate a little extra nutmeg over the top and serve immediately with wide straws.
