Frozen Panama Passion Fruit and Coconut Cooler with Lime

Scoop the pulp from the passion fruit and press it through a fine sieve, keeping the juice and discarding most of the seeds. Reserve a spoonful of seeds for garnish.

Ingredients

  • 1/2 cup passion fruit pulp (about 4 fresh passion fruit)
  • 1/2 cup cream of coconut
  • 3 ounces white rum
  • 1 ounce fresh lime juice
  • 2 cups ice cubes
  • 1 tablespoon simple syrup, or to taste
  • 1 lime, cut into wheels
  • 2 sprigs fresh mint
  • 1 pinch sea salt

Instructions

  1. Scoop the pulp from the passion fruit and press it through a fine sieve, keeping the juice and discarding most of the seeds. Reserve a spoonful of seeds for garnish.
  2. Chill two tall glasses in the freezer for 10 minutes so the drink stays frozen longer once poured.
  3. Add the passion fruit juice, cream of coconut, rum, lime juice, simple syrup and salt to a blender.
  4. Add the ice and blend on high for 30 to 40 seconds, until the mixture is smooth, thick and pale gold with no ice shards left.
  5. Taste and adjust with a little more simple syrup if your passion fruit is especially sharp, or more lime if it is very sweet.
  6. Pour into the chilled glasses; the drink should mound slightly above the rim rather than settle flat.
  7. Garnish each glass with a lime wheel, a mint sprig and a few reserved passion fruit seeds.
  8. Serve immediately with a straw, before the blend begins to separate.
  9. Panama's Caribbean coast drinks coconut in nearly everything, and passion fruit, known locally as maracuya, is the fruit that keeps that richness from becoming cloying. The pinch of salt is not optional: it pulls the coconut forward and makes the passion fruit taste more like itself. For a version without alcohol, replace the rum with an equal measure of chilled coconut water and add a little extra lime.
