Ingredients

  • 2 tablespoons loose green tea or 3 green tea bags
  • 2 cups boiling water
  • 1 large bunch fresh spearmint, plus sprigs to garnish
  • 3 tablespoons honey
  • 3 tablespoons fresh lemon juice
  • 2 cups chilled sparkling water
  • 2 cups ice
  • Lemon slices, for garnish

Instructions

  1. Steep the green tea in the boiling water for 3 minutes, then remove the leaves or bags to avoid bitterness.
  2. Add the bunch of fresh mint and the honey to the hot tea and stir until the honey dissolves.
  3. Let the tea steep with the mint for 10 minutes to draw out the fragrant oils, then discard the mint.
  4. Stir in the lemon juice and let the tea cool to room temperature.
  5. Refrigerate the mint tea base until well chilled, at least 1 hour.
  6. Fill four tall glasses with ice.
  7. Divide the chilled tea among the glasses and top each with sparkling water, stirring once gently.
  8. Garnish with fresh mint sprigs and lemon slices and serve immediately.
