Passion Fruit and Coconut Water Cooler with Fresh Mint and Lime

If using fresh passion fruit, scoop the pulp and seeds into a bowl. Reserve a spoonful of seeds for garnish.

Ingredients

  • 1/2 cup passion fruit pulp (from about 6 fresh passion fruits, or frozen)
  • 3 cups coconut water
  • 2 tablespoons honey or agave, or to taste
  • Juice of 1 lime
  • 1 cup cold sparkling water
  • Handful of fresh mint leaves
  • Lime wheels, for garnish
  • Plenty of ice

Instructions

  1. If using fresh passion fruit, scoop the pulp and seeds into a bowl. Reserve a spoonful of seeds for garnish.
  2. In a pitcher, stir together the passion fruit pulp, coconut water, honey and lime juice until the sweetener dissolves.
  3. Taste and adjust — add a little more honey if the passion fruit is very tart.
  4. Gently muddle a few mint leaves in the bottom of the pitcher or in each glass to release their aroma.
  5. Fill glasses with ice and pour the passion fruit mixture over, leaving room at the top.
  6. Top each glass with a splash of cold sparkling water for a little lift and fizz.
  7. Garnish with fresh mint, a lime wheel and a few reserved passion fruit seeds, and serve immediately.
