Thai Grilled Coconut Lemongrass Chicken Skewers with Peanut Sauce

Combine the coconut milk, lemongrass, fish sauce, brown sugar, curry powder, garlic and ginger in a bowl. Add the chicken and marinate for at least 1 hour.

Ingredients

  • 1 1/2 lbs boneless chicken thighs, cut into strips
  • 1 cup canned coconut milk
  • 2 stalks lemongrass, minced
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon yellow curry powder
  • 3 cloves garlic, grated
  • 1 tablespoon grated fresh ginger
  • For peanut sauce: 1/2 cup peanut butter, 1/2 cup coconut milk, 2 tablespoons soy sauce, 1 tablespoon lime juice, 1 teaspoon chili paste
  • Lime wedges and cilantro, for serving
  • Bamboo skewers, soaked in water

Instructions

  1. Combine the coconut milk, lemongrass, fish sauce, brown sugar, curry powder, garlic and ginger in a bowl. Add the chicken and marinate for at least 1 hour.
  2. Thread the chicken strips onto the soaked bamboo skewers, weaving them so they lie flat.
  3. Make the peanut sauce: warm the peanut butter, coconut milk, soy sauce, lime juice and chili paste in a small pan, whisking until smooth and glossy. Thin with a splash of water if needed.
  4. Heat a grill or grill pan to medium-high and oil the grates well.
  5. Grill the skewers 3–4 minutes per side, basting with any leftover marinade early on, until deeply golden and cooked through.
  6. Let the skewers rest a couple of minutes, then arrange on a platter with lime wedges and a shower of cilantro.
  7. Serve hot with the warm peanut sauce for dipping.
  8. This dish takes its cues from Thai satay, where thin ribbons of meat are bathed in coconut and aromatics before meeting the fire. The coconut milk keeps the chicken juicy while the lemongrass and curry lend that unmistakable Southeast Asian perfume. Paired with a rich, tangy peanut sauce, these skewers are equally at home as a shared appetizer or, over jasmine rice with a cucumber salad, a full tropical dinner.
