- 6 ounces Torrontes white wine, chilled
- 3 ounces sparkling water, chilled
- Crushed ice
- Thin peach slices, for garnish
Instructions
- Combine the sugar, water and rosemary sprigs in a small saucepan and bring to a gentle simmer, stirring until the sugar dissolves.
- Take the pan off the heat and let the rosemary steep for 20 minutes, then strain out the sprigs and chill the syrup completely. Steeping off the heat keeps the rosemary bright and floral rather than turning it piney and medicinal.
- Puree the chopped peaches with the lemon juice until completely smooth, then press the puree through a fine sieve for a silky texture.
- Stir the chilled rosemary syrup into the peach puree, tasting as you go — very ripe fruit may need only half of it.
- Fill four tall glasses with crushed ice and divide the peach mixture among them.
- Top each glass with the chilled Torrontes and a splash of sparkling water, then stir once gently to combine without knocking out the fizz.
