Campfire Cast-Iron Hungarian Lecso with Eggs and Farmers-Market Peppers

Ingredients

  • 3 tablespoons lard or olive oil
  • 1 large yellow onion, sliced thin
  • 6 large sweet peppers (Hungarian wax or bell), seeded and cut into thick strips
  • 5 ripe farmers-market tomatoes, peeled and roughly chopped
  • 2 tablespoons sweet Hungarian paprika
  • 1 teaspoon hot paprika or 1 small chili, minced (optional)
  • 4 ounces smoked sausage (kolbasz), sliced into coins
  • 1 teaspoon sea salt, plus more to taste
  • 1/2 teaspoon freshly ground black pepper
  • 4 large eggs
  • 2 tablespoons chopped fresh parsley
  • Crusty country bread, for serving

Instructions

  1. Build a small campfire and let it burn down to an even bed of coals, or set a cast-iron skillet over a camp stove at medium heat. Steady coals matter more than a big flame — lecso wants a gentle simmer, not a hard sear.
  2. Melt the lard in the skillet and add the sliced onion with a pinch of salt. Cook 6 to 8 minutes, stirring often, until soft and translucent but not browned.
  3. Add the sausage coins and cook 3 minutes until their fat renders out and turns the oil deep orange.
  4. Pull the skillet off direct heat for a moment, stir in both paprikas, and return it to the coals. Paprika scorches in seconds over high heat and turns bitter — this off-heat pause is the whole trick.
  5. Add the pepper strips, toss to coat, and cook 8 to 10 minutes until they slump and soften at the edges.
  6. Stir in the chopped tomatoes, salt and black pepper. Simmer uncovered 15 to 20 minutes, stirring occasionally, until the tomatoes break down into a loose, glossy sauce and the peppers are completely tender.
  7. Taste and adjust the salt. Make four shallow wells in the surface with the back of a spoon and crack an egg into each.
  8. Cover the skillet with a lid or foil and cook 4 to 6 minutes over gentle coals, until the whites are set and the yolks still run.
  9. Scatter parsley over the top and bring the skillet straight to the table on a wooden board. Serve with torn crusty bread for mopping.
  10. Lecso is Hungary's answer to the August pepper glut — every market stall and backyard garden overflows at once, and families cook enormous batches in a bogracs, the iron kettle slung over an open fire, to eat now and jar for winter. The campfire version is not a modern novelty but the oldest way to make it, and cooking over coals gives the sauce a faint smokiness no kitchen burner can match.
