Chill two short rocks glasses in the freezer for 10 minutes while you prepare everything else.
Serves 2
Ingredients
- 2 limes, each cut into 6 wedges
- 4 teaspoons runny honey (acacia or wildflower), plus extra for the sticks
- 4 ounces vodka
- 2 cups crushed ice
- 2 wooden honey dippers or short cinnamon sticks
- 2 thin lime wheels, for garnish
- Pinch of flaky salt, optional
Instructions
- Chill two short rocks glasses in the freezer for 10 minutes while you prepare everything else.
- Divide the lime wedges between the chilled glasses and add 2 teaspoons of honey to each.
- Muddle firmly but briefly — six or seven presses — to release the juice and the fragrant oils from the peel without shredding the bitter white pith underneath.
- Pack each glass to the rim with crushed ice, then pour 2 ounces of vodka slowly over the top of the ice in each so it filters down through the honey and lime.
- Stir with a bar spoon from the bottom up, lifting the honey off the base and folding it through the ice until the drink turns cloudy and pale gold.
- Coat each wooden dipper or cinnamon stick in a thick spiral of honey and stand one in each glass — this is the signature of a true Dawa, letting the drinker sweeten to their own taste as they go.
- Garnish with a lime wheel and a pinch of flaky salt if you like it sharper, and serve immediately while the ice is still tight.
- Dawa means medicine in Swahili, and the drink earned the name honestly — it began as a bar-side cold remedy in Nairobi before becoming the unofficial national cocktail of Kenya. The honey stick is not a garnish but a tool: the drink is served deliberately under-sweetened so each person adjusts it downward-sour or upward-sweet at their own pace, which makes it unusually forgiving across a table of different palates. For a family-friendly version, replace the vodka with cold sparkling water — the muddled lime and honey carry the drink perfectly well on their own.
