Omani Chilled Lime and Cardamom Cooler with Fresh Mint over Ice

Combine the sugar, 1/2 cup water and the crushed cardamom pods in a small saucepan. Bring to a simmer, stirring until the sugar dissolves, then remove from the heat.

Ingredients

  • 6 whole limes, peeled and quartered (about 1 cup juice-heavy flesh)
  • 10 green cardamom pods, lightly crushed
  • 1 cup loosely packed fresh mint leaves, plus sprigs to garnish
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 3 cups cold water
  • 1/4 tsp salt
  • 1 tbsp rose water (optional)
  • 4 lime wheels, for garnish
  • Plenty of ice cubes

Instructions

  1. Combine the sugar, 1/2 cup water and the crushed cardamom pods in a small saucepan. Bring to a simmer, stirring until the sugar dissolves, then remove from the heat.
  2. Cover the pan and let the cardamom steep for 25 minutes as the syrup cools to room temperature, then strain out the pods and chill the syrup thoroughly.
  3. Put the peeled lime quarters, mint leaves, salt and 1 cup of the cold water into a blender. Pulse in short bursts for no more than 15 seconds total.
  4. Do not over-blend. The white pith and mint stems turn bitter fast, and short pulses give you all the fragrance without the harsh edge.
  5. Strain the mixture through a fine sieve into a pitcher, pressing gently on the solids with the back of a spoon, then discard what is left in the sieve.
  6. Stir in the remaining 2 cups cold water, the chilled cardamom syrup and the rose water if using. Taste and adjust — it should be bracingly tart with the sweetness arriving a beat later.
  7. Refrigerate for at least an hour so the cooler is properly cold before it ever touches ice, which keeps it from watering down.
  8. Fill four tall glasses to the brim with ice, pour over the cooler, and garnish each with a lime wheel and a slapped mint sprig.
  9. Limes are so bound up with Omani cooking that dried black limes, or loomi, flavor everything from rice to fish stews across the Gulf. Fresh lime with cardamom, though, belongs to the hot part of the afternoon, poured out for guests alongside dates and coffee as a matter of course. The pinch of salt is not optional in the traditional version — it sharpens the citrus and, in a climate like Oman's, it was always doing more than one job.
