Ingredients
- 4 ounces (120ml) gin
- 6 ounces (180ml) fresh pink grapefruit juice, strained
- 6 ounces (180ml) chilled tonic water or club soda
- 1/2 ounce (15ml) fresh lime juice
- 1/2 ounce (15ml) simple syrup, or to taste
- 2 dashes grapefruit bitters (optional)
- Plenty of large clear ice cubes
- 2 pink grapefruit wedges, to garnish
- 2 lime wheels, to garnish
Instructions
- Chill two tall highball glasses in the freezer for 10 minutes. A long drink is mostly about temperature, and a warm glass ruins it within a minute.
- Squeeze and strain the grapefruit juice fresh. Bottled juice is heavier and sweeter and will flatten the drink into something closer to a soda.
- Combine the gin, grapefruit juice, lime juice and simple syrup in a small pitcher and stir well.
- Fill each chilled glass to the top with large ice cubes. Big cubes melt slowly and keep the drink from watering down as it sits.
- Divide the gin mixture between the glasses, pouring gently over the ice.
- Top each with the chilled tonic water, poured down the side of the glass or over the back of a bar spoon so you keep as much carbonation as possible.
- Add the bitters if using, give one slow lift with a bar spoon rather than a stir, and garnish with a grapefruit wedge and lime wheel.
- The lonkero, or long drink, was invented for the 1952 Helsinki Olympics as a way to serve visitors something quick when bartenders were scarce, and Finland has been drinking it ever since. Grapefruit is the original and still the definitive flavor, and the point of the format is restraint: one spirit, one citrus, one sparkling top, served tall and very cold. Please drink responsibly, and always offer a good non-alcoholic option alongside.
