- 1 orange slice, halved
- Plenty of ice cubes
- Pinch of ground cinnamon (optional)

- Squeeze a lemon wedge into each glass and drop it in.
- Pour in the chilled red wine, filling each glass halfway.

- Stir gently once to combine without knocking out the fizz.
- Add a splash of sweet vermouth or a pinch of cinnamon if you like a deeper flavor.
- Garnish with a half orange slice and serve immediately.
- Kalimotxo was born at a 1972 festival in Algorta in the Basque Country, when organizers reportedly found their wine had turned and rescued it with cola. It became a fiesta staple across Spain, and it is the easiest weeknight drink there is: two ingredients, equal parts, and a humble bottle of red does the job perfectly.
