Ingredients
- 1 1/2 cups (360ml) chilled fino or manzanilla sherry
- 3 cups (720ml) chilled lemon-lime soda
- 1 lemon, thinly sliced
- 8 fresh mint sprigs
- Plenty of ice cubes
- Optional: 1 lime, cut into wedges
- Optional: splash of sparkling water for a lighter drink
- Optional: 4 thin cucumber ribbons for garnish
Instructions
- Chill the sherry and soda thoroughly — the drink is best very cold.
- Fill a large pitcher halfway with ice. Add the lemon slices and gently bruise 4 mint sprigs between your palms before dropping them in.
- Pour in the sherry, then slowly top with the lemon-lime soda. The classic ratio is 1 part sherry to 2 parts soda.
- Stir gently once or twice to combine without knocking out the bubbles.
- Fill tall glasses with fresh ice, pour, and garnish each with a mint sprig, a lemon slice and a cucumber ribbon if you like.
- For a drier, lighter drink, swap half of the soda for sparkling water and add a squeeze of lime.
