Hibiscus Paloma Cocktail with Tajin Salt Rim

Ingredients

  • 2 oz blanco tequila
  • 1 oz fresh grapefruit juice
  • 1/2 oz fresh lime juice
  • 1 oz hibiscus syrup
  • Grapefruit sparkling water or club soda to top
  • Ice
  • Tajin seasoning for rim
  • Lime wedge for rim wetting
  • Dried hibiscus flowers and lime wheel for garnish
  • For hibiscus syrup: 1/2 cup dried hibiscus flowers, 1 cup sugar, 1 cup water

Instructions

  1. Make hibiscus syrup: simmer dried hibiscus flowers, sugar, and water for 5 minutes. Strain and cool completely.
  2. Rub the rim of a rocks glass with a lime wedge, then press into Tajin to coat the rim.
  3. Fill glass with ice.
  4. Combine tequila, grapefruit juice, lime juice, and hibiscus syrup in a cocktail shaker with ice. Shake 10 seconds.
  5. Strain into the prepared glass over fresh ice.
  6. Top with grapefruit sparkling water and stir gently once.
  7. Garnish with a dried hibiscus flower and lime wheel. Serve immediately.
