Ingredients
- 6 cups fresh seedless watermelon, cubed
- 2 cups cold water
- 3 tbsp fresh lime juice (about 2 limes)
- 2 tbsp honey or agave syrup
- 1/2 cup fresh mint leaves, plus more for garnish
- 2 tbsp chia seeds
- Pinch of salt
- Ice cubes
- Lime slices and fresh mint sprigs for garnish
- Tajin for glass rim (optional)
Instructions
- Combine watermelon cubes, cold water, lime juice, honey, mint leaves, and a pinch of salt in a blender.
- Blend on high for 60 seconds until completely smooth and bright pink.
- Strain through a fine-mesh strainer, pressing on the solids to extract all the juice. Discard pulp.
- Stir in chia seeds and refrigerate for 15 minutes to allow them to slightly hydrate and thicken.
- Stir well before serving — chia seeds will have softened and plumped slightly.
- Rim glasses with lime and Tajin if desired. Fill glasses with ice.
- Pour agua fresca over ice and garnish with fresh mint sprigs and lime slices.
