A Refreshing Non-Alcoholic Spritzer
This elegant lavender honey lemonade spritzer is the perfect mocktail for any occasion. Fragrant lavender syrup meets fresh-squeezed lemon juice and sparkling water for a drink that looks and tastes extraordinary.
Ingredients
- 2 tbsp lavender honey syrup (recipe below)
- 3 tbsp fresh lemon juice (about 1 large lemon)
- 1 cup sparkling water, chilled
- Ice cubes
- Fresh lavender sprigs for garnish
- Lemon wheel for garnish
For the Lavender Honey Syrup
- 1/2 cup honey
- 1/2 cup water
- 2 tbsp dried culinary lavender
Instructions
- Make the lavender honey syrup: Combine honey and water in a small saucepan over medium heat. Stir until honey dissolves. Add dried lavender, reduce heat to low, and simmer for 10 minutes. Remove from heat, cover, and let steep for 20 minutes. Strain through a fine mesh sieve and let cool completely. Store in the refrigerator for up to 2 weeks.
- Prepare the glass: Fill a tall glass with ice cubes.
- Mix the drink: Pour the lavender honey syrup over the ice, followed by the fresh lemon juice. Stir gently to combine.
- Add sparkle: Top with chilled sparkling water and stir very gently once or twice.
- Garnish and serve: Garnish with a sprig of fresh lavender and a lemon wheel. Serve immediately.
Tips
- Make sure to use culinary-grade lavender, not decorative lavender which may be treated with pesticides.
- Adjust sweetness by adding more or less lavender honey syrup to taste.
- For a party version, multiply the recipe and mix everything except sparkling water in a pitcher. Add sparkling water to individual glasses when serving.
- The lavender honey syrup is also wonderful in tea, drizzled over yogurt, or on pancakes.
