Ingredients
- 8 oz halloumi cheese, sliced 1/4 inch thick
- 2 large flour tortillas
- 1 cup mixed greens
- 1/2 cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup kalamata olives, sliced
- 2 tbsp hummus
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Fresh mint leaves
- Za'atar seasoning
Instructions
- Pat halloumi dry and brush both sides with olive oil. Sprinkle with za'atar.
- Grill halloumi on high heat for 2 minutes per side until golden char marks appear.
- Warm tortillas on the grill for 30 seconds each side.
- Spread hummus generously down the center of each tortilla.
- Layer grilled halloumi, mixed greens, cucumber, tomatoes, red onion, and olives.
- Drizzle with lemon juice, scatter fresh mint, and wrap tightly. Slice in half on the diagonal.
