Tres Leches Cake with Cinnamon Whipped Cream

Ingredients

  • 1 cup all-purpose flour
  • 1.5 tsp baking powder
  • 5 large eggs, separated
  • 1 cup sugar (divided)
  • 1/3 cup whole milk
  • 1 tsp vanilla extract
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 1 cup whole milk (for soaking)
  • 2 cups heavy whipping cream
  • 3 tbsp powdered sugar
  • 1 tsp ground cinnamon
  • Ground cinnamon and sliced strawberries for garnish

Instructions

  1. Preheat oven to 350°F. Grease a 9x13 inch baking pan.
  2. Beat egg yolks with 3/4 cup sugar until pale and thick. Stir in 1/3 cup milk and vanilla.
  3. Fold in flour and baking powder. Beat egg whites to stiff peaks with remaining 1/4 cup sugar; fold into batter.
  4. Pour batter into pan and bake 25-30 minutes until a toothpick comes out clean. Cool completely.
  5. Whisk condensed milk, evaporated milk, and whole milk together. Pierce the cooled cake all over with a fork.
  6. Slowly pour the three-milk mixture over the cake. Refrigerate at least 2 hours to absorb.
  7. Whip cream with powdered sugar and cinnamon to soft peaks. Spread over cake, dust with cinnamon, and top with strawberries.
