Ingredients

  • 3 ripe peaches, halved and pitted
  • 8 oz bourbon
  • 3 tablespoons honey
  • 2 oz fresh lemon juice
  • 4 sprigs fresh thyme
  • 1 cup club soda
  • Crushed ice
  • Peach slices and thyme, to garnish

Instructions

  1. Heat a grill to medium-high and grill the peach halves cut-side down 3-4 minutes until caramelized and smoky.
  2. Briefly lay the thyme sprigs on the grill for 20-30 seconds to release their oils.
  3. Chop two of the grilled peaches and add to a pitcher with the honey, muddling until pulpy.
