- 3 limes, halved
- 3 tablespoons honey or agave
- 1/2 cup fresh basil leaves
- 2 cups sparkling water, chilled

- Heat a grill to high and grill the watermelon cubes (on a grate or in a grill basket) for 2-3 minutes per side until lightly charred.
- Grill the lime halves cut-side down for 2-3 minutes until caramelized.
- Add the grilled watermelon to a blender with the juice of the charred limes, the honey and a pinch of salt.
- Blend until smooth, then add the basil and pulse briefly to keep flecks of green.
- Strain the mixture through a fine sieve into a pitcher for a silky texture.
- Chill for 15 minutes, or pour straight over ice if you are eager.
- Top each glass with sparkling water and stir gently.
- Garnish with a charred lime wheel and a basil sprig, and serve ice-cold.
