Sparkling Grilled Watermelon Agua Fresca with Charred Lime and Basil

Heat a grill to high and grill the watermelon cubes (on a grate or in a grill basket) for 2-3 minutes per side until lightly charred.

Serves 4

Ingredients

  • 6 cups cubed watermelon
  • 3 limes, halved
  • 3 tablespoons honey or agave
  • 1/2 cup fresh basil leaves
  • 2 cups sparkling water, chilled
  • Pinch of flaky salt
  • Ice cubes
  • Basil sprigs and lime wheels, to garnish

Instructions

  1. Heat a grill to high and grill the watermelon cubes (on a grate or in a grill basket) for 2-3 minutes per side until lightly charred.
  2. Grill the lime halves cut-side down for 2-3 minutes until caramelized.
  3. Add the grilled watermelon to a blender with the juice of the charred limes, the honey and a pinch of salt.
  4. Blend until smooth, then add the basil and pulse briefly to keep flecks of green.
  5. Strain the mixture through a fine sieve into a pitcher for a silky texture.
  6. Chill for 15 minutes, or pour straight over ice if you are eager.
  7. Top each glass with sparkling water and stir gently.
  8. Garnish with a charred lime wheel and a basil sprig, and serve ice-cold.
