Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder

  • 2 large eggs
  • 1 3/4 cups milk
  • 3 tbsp melted butter, plus more for the griddle
  • 8 rashers thick-cut bacon
  • 3 ripe peaches, halved and pitted
  • 3/4 cup pure maple syrup
  • 1/2 tsp ground cinnamon
  • Pinch of flaky salt

Instructions

  1. Build a campfire and let it settle to steady, glowing coals; set a flat cast-iron griddle or large skillet over the heat to warm through.
  2. Whisk the flour, sugar, baking powder and salt in one bowl, and the eggs, milk and melted butter in another, then fold the wet into the dry until just combined and still a little lumpy.
  3. Lay the bacon on the hot griddle and cook until crisp, brushing the last minute with a spoonful of maple syrup so it caramelizes; lift to a plate and keep warm.
  4. Wipe the griddle, add a knob of butter, and griddle the peach halves cut-side down until charred and softened, about 4 minutes.
  5. Butter the griddle again and pour out rounds of batter; cook until bubbles break across the surface, then flip and finish until golden and puffed.
  6. Warm the remaining maple syrup with the cinnamon at the edge of the fire until loose and fragrant.
  7. Stack the pancakes with the maple bacon and grilled peaches, drench in the warm cinnamon-maple syrup and finish with a pinch of flaky salt.
  8.
