Charred Strawberry and Rosemary Gin Smash with Grilled Lemon

Heat a grill or grill pan to high and lightly oil the grates.

Ingredients

  • 8 ripe strawberries, hulled and halved
  • 2 sprigs fresh rosemary
  • 1 lemon, halved
  • 4 oz London dry gin
  • 1 oz simple syrup
  • Soda water, to top
  • Ice, for serving
  • Extra strawberries and rosemary, to garnish

Instructions

  1. Heat a grill or grill pan to high and lightly oil the grates.
  2. Grill the strawberry halves, one rosemary sprig and the cut sides of the lemon until charred and caramelized, about 2 to 3 minutes, then let cool slightly.
  3. Muddle the charred strawberries and the leaves from the grilled rosemary in a shaker until broken down and juicy.
  4. Squeeze in the juice of the grilled lemon and add the gin and simple syrup.
  5. Fill the shaker with ice and shake hard until well chilled.
  6. Strain into two ice-filled glasses and top with a splash of soda water.
  7. Garnish each with a fresh strawberry and a rosemary sprig.
  8. The gin smash is a British summer-garden staple, and charring the fruit before it goes in the shaker is a trick borrowed from the grill season - the smoke and caramelization deepen the strawberries and coax a piney warmth from the rosemary.
