Grilled Lime and Passionfruit Virgin Caipirinha Cooler

Ingredients

  • 2 limes, halved
  • 2 ripe passionfruit, pulp scooped
  • 3 tbsp cane sugar or brown sugar
  • Sparkling water, to top
  • Ice, preferably crushed
  • Lime wheels, to garnish
  • Pinch of flaky salt (optional)

Instructions

  1. Heat a grill or grill pan to high and lightly oil the grates.
  2. Grill the lime halves cut-side down until deeply charred and caramelized, about 2 to 3 minutes, then let cool slightly.
  3. Squeeze the warm grilled lime juice into a small jug, catching any charred bits for flavor.
  4. Add the cane sugar and passionfruit pulp and stir until the sugar dissolves into a fragrant syrup.
  5. Fill two glasses with crushed ice and divide the lime-passionfruit mixture between them.
  6. Top with sparkling water and stir gently to combine.
  7. Garnish with lime wheels and a tiny pinch of salt to make the fruit pop.
