Red-White-and-Blue Sparkling Berry Coconut Cooler

Red-White-and-Blue Sparkling Berry Coconut Cooler

Blend the strawberries with 1 tbsp honey and 1 tbsp lime juice until smooth, then strain to make a bright red puree.

Serves 4

Ingredients

  • 1 cup fresh strawberries, hulled
  • 1 cup fresh blueberries
  • 1 cup coconut water, chilled
  • 3 tbsp honey or agave syrup
  • 2 tbsp fresh lime juice
  • 1/2 cup canned coconut cream
  • 2 cups sparkling water, chilled
  • 2 cups ice cubes
  • Fresh mint leaves, to garnish

Instructions

  1. Blend the strawberries with 1 tbsp honey and 1 tbsp lime juice until smooth, then strain to make a bright red puree.
  2. Rinse the blender and blend the blueberries with 1 tbsp honey and the remaining lime juice into a deep blue puree.
  3. Whisk the coconut cream with the coconut water and remaining honey to make a creamy white layer.
  4. Spoon the strawberry puree into the bottom of four tall glasses.
  5. Add a layer of ice, then gently pour the coconut mixture over the back of a spoon to keep the layers distinct.
  6. Top with the blueberry puree and a little more ice, layering for a red, white and blue effect.
  7. Slowly top each glass with sparkling water to add fizz without muddying the layers.
  8. Garnish with fresh mint and serve with a straw so guests can swirl the layers together.
  9. This alcohol-free cooler proves a festive holiday drink does not need liquor to feel special. The tropical sweetness of coconut bridges the tart berries, and the dramatic red-white-and-blue layering makes it a hit with kids and designated drivers alike at any summer celebration.
