- 1 cup fresh strawberries, hulled
- 1 cup fresh blueberries
- 1 cup coconut water, chilled
- 3 tbsp honey or agave syrup
- 2 tbsp fresh lime juice
- 1/2 cup canned coconut cream
- 2 cups sparkling water, chilled
- 2 cups ice cubes
- Fresh mint leaves, to garnish
Instructions
- Blend the strawberries with 1 tbsp honey and 1 tbsp lime juice until smooth, then strain to make a bright red puree.
- Rinse the blender and blend the blueberries with 1 tbsp honey and the remaining lime juice into a deep blue puree.
- Whisk the coconut cream with the coconut water and remaining honey to make a creamy white layer.
- Spoon the strawberry puree into the bottom of four tall glasses.
- Add a layer of ice, then gently pour the coconut mixture over the back of a spoon to keep the layers distinct.
- Top with the blueberry puree and a little more ice, layering for a red, white and blue effect.
- Slowly top each glass with sparkling water to add fizz without muddying the layers.
- Garnish with fresh mint and serve with a straw so guests can swirl the layers together.
