Sparkling Grilled Peach and Ginger Mocktail with Fresh Mint

Sparkling Grilled Peach and Ginger Mocktail with Fresh Mint

Grill the peach halves cut-side down over medium coals until caramelized and lightly charred, about 4 minutes, then set a few slices aside for garnish.

Serves 4

Ingredients

  • 4 ripe peaches, halved and pitted
  • 1 tbsp honey
  • 2 inch piece fresh ginger, sliced
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/4 cup fresh lime juice
  • 2 cups sparkling water, chilled
  • Fresh mint sprigs
  • Ice

Instructions

  1. Grill the peach halves cut-side down over medium coals until caramelized and lightly charred, about 4 minutes, then set a few slices aside for garnish.
  2. Make a quick ginger syrup: simmer the sugar, water and sliced ginger for 5 minutes, then remove from the heat and let it steep and cool.
  3. Blend the grilled peaches with the honey, lime juice and strained ginger syrup until completely smooth.
  4. Pass the puree through a sieve for a silky base if you like, then chill.
  5. Fill tall glasses with ice and divide the peach base among them.
  6. Top each with chilled sparkling water and stir gently to combine.
  7. Garnish with a charred peach slice and a sprig of fresh mint.
  8. Serve immediately while lively and cold.
  9. Grilling peaches concentrates their sugars and adds a whisper of smoke, transforming a simple summer mocktail into something far more grown-up. Paired with a warming homemade ginger syrup and a splash of sparkling water, it is bright, fizzy and completely alcohol-free — a refreshing cooler that lets everyone at the cookout, kids included, raise a celebratory glass.
