Fresh Strawberry Blueberry Summer Lemonade with Lemon and Mint

Ingredients

  • 1 cup fresh strawberries, hulled
  • 1 cup fresh blueberries
  • 1 cup fresh lemon juice
  • 1/2 cup sugar
  • 4 cups cold water
  • 2 cups ice
  • Lemon slices, for garnish
  • Fresh mint sprigs, for garnish

Instructions

  1. Blend the strawberries with a splash of water until smooth, then strain the puree to remove the seeds.
  2. Lightly crush half of the blueberries and leave the rest whole for garnish.
  3. In a large pitcher, stir together the lemon juice, sugar and cold water until the sugar fully dissolves.
  4. Stir the strawberry puree and crushed blueberries into the lemonade, tinting it a deep berry-red.
  5. Taste and adjust with a little more sugar or lemon to balance sweet and tart.
  6. Fill tall glasses with ice and pour the berry lemonade over the top.
  7. Drop a few whole blueberries into each glass so they bob red-white-and-blue against the ice.
  8. Garnish with a lemon slice and a sprig of mint and serve ice-cold.
