Frozen Passion Fruit and Lime Rum Slush with Fresh Mint

Chill 4 coupe or rocks glasses in the freezer while you prepare the drink.

Ingredients

  • 1 cup passion fruit pulp (fresh or frozen, thawed)
  • 1/2 cup white rum
  • 1/4 cup fresh lime juice
  • 3 tablespoons simple syrup or cane sugar syrup
  • 4 cups ice cubes
  • 1/2 cup coconut water
  • 8 fresh mint leaves, plus sprigs to garnish
  • Lime wheels, to garnish
  • Passion fruit seeds, for topping

Instructions

  1. Chill 4 coupe or rocks glasses in the freezer while you prepare the drink.
  2. Add the passion fruit pulp, rum, lime juice, simple syrup, coconut water, and mint leaves to a blender.
  3. Add the ice cubes and blend on high until completely smooth and slushy, about 30 seconds.
  4. Taste and adjust with a little more syrup for sweetness or lime for tartness.
  5. If the slush is too thick to pour, blend in a splash more coconut water.
  6. Pour the frozen slush into the chilled glasses, filling to the rim.
  7. Garnish each with a lime wheel, a mint sprig, and a spoonful of passion fruit seeds.
  8. Serve immediately with a straw while frosty and vibrant.
