- 1 cup passion fruit pulp (fresh or frozen, thawed)
- 1/2 cup white rum
- 1/4 cup fresh lime juice
- 3 tablespoons simple syrup or cane sugar syrup
- 4 cups ice cubes
- 1/2 cup coconut water
- 8 fresh mint leaves, plus sprigs to garnish
- Lime wheels, to garnish
- Passion fruit seeds, for topping
Instructions
- Chill 4 coupe or rocks glasses in the freezer while you prepare the drink.
- Add the passion fruit pulp, rum, lime juice, simple syrup, coconut water, and mint leaves to a blender.
- Add the ice cubes and blend on high until completely smooth and slushy, about 30 seconds.
- Taste and adjust with a little more syrup for sweetness or lime for tartness.
- If the slush is too thick to pour, blend in a splash more coconut water.
- Pour the frozen slush into the chilled glasses, filling to the rim.
- Garnish each with a lime wheel, a mint sprig, and a spoonful of passion fruit seeds.
- Serve immediately with a straw while frosty and vibrant.
