Sparkling Calamansi and Coconut Water Cooler with Fresh Mint

Sparkling Calamansi and Coconut Water Cooler with Fresh Mint

In a small pitcher, stir together the calamansi juice, honey, and a pinch of salt until the honey dissolves.

Serves 4

Ingredients

  • 1/2 cup fresh calamansi juice (or a mix of lime and mandarin juice)
  • 2 cups chilled coconut water
  • 3 tablespoons honey or cane syrup
  • 1 cup sparkling water, chilled
  • 12 fresh mint leaves, plus sprigs to garnish
  • 1 cup ice cubes
  • Calamansi or lime wheels, to garnish
  • Pinch of salt

Instructions

  1. In a small pitcher, stir together the calamansi juice, honey, and a pinch of salt until the honey dissolves.
  2. Gently muddle the mint leaves in the base of the pitcher to release their aroma without shredding them.
  3. Pour in the chilled coconut water and stir to combine.
  4. Fill 4 tall glasses with ice cubes.
  5. Divide the calamansi-coconut base among the glasses, filling them about two-thirds full.
  6. Top each glass with chilled sparkling water and stir once gently to keep the fizz.
  7. Garnish with calamansi or lime wheels and a sprig of fresh mint.
  8. Serve right away while lively and effervescent.
  9. Calamansi is the little citrus that defines Filipino refreshment, its fragrant sweet-tart juice squeezed over everything from grilled fish to iced drinks. Paired with hydrating coconut water and a lift of sparkling water, this alcohol-free cooler is a bright, tropical thirst-quencher tailor-made for the peak of summer heat.
