- 3 cups frozen pineapple chunks
- 1/2 cup cream of coconut
- 1/2 cup coconut milk
- 1/2 cup white rum
- 2 tablespoons fresh lime juice
- 2 cups ice
- 1/4 cup toasted coconut flakes
- Fresh pineapple wedges, for garnish
- Maraschino cherries, for garnish
Instructions
- Add the frozen pineapple, cream of coconut, coconut milk, rum and lime juice to a blender.
- Add the ice and blend on high until completely smooth and slushy.
- Taste and adjust with a little more cream of coconut if you prefer it sweeter.
- Toast the coconut flakes in a dry pan until golden and fragrant, then let them cool.
- Pour the frozen colada into chilled tall glasses.
- Sprinkle the toasted coconut over the top of each drink.
- Garnish each glass with a fresh pineapple wedge and a cherry.
- Serve immediately with a straw before the drink begins to melt.
