Frozen Pina Colada with Pineapple and Toasted Coconut

Add the frozen pineapple, cream of coconut, coconut milk, rum and lime juice to a blender.

Ingredients

  • 3 cups frozen pineapple chunks
  • 1/2 cup cream of coconut
  • 1/2 cup coconut milk
  • 1/2 cup white rum
  • 2 tablespoons fresh lime juice
  • 2 cups ice
  • 1/4 cup toasted coconut flakes
  • Fresh pineapple wedges, for garnish
  • Maraschino cherries, for garnish

Instructions

  1. Add the frozen pineapple, cream of coconut, coconut milk, rum and lime juice to a blender.
  2. Add the ice and blend on high until completely smooth and slushy.
  3. Taste and adjust with a little more cream of coconut if you prefer it sweeter.
  4. Toast the coconut flakes in a dry pan until golden and fragrant, then let them cool.
  5. Pour the frozen colada into chilled tall glasses.
  6. Sprinkle the toasted coconut over the top of each drink.
  7. Garnish each glass with a fresh pineapple wedge and a cherry.
  8. Serve immediately with a straw before the drink begins to melt.
  9. The pina colada was born in San Juan, Puerto Rico, where it became the island's official drink and a symbol of tropical leisure.
