No-Bake Red-White-and-Blue Berry Cheesecake Jars

Stir the graham cracker crumbs with the melted butter and divide among six small jars, pressing to form a base.

Serves 6

Ingredients

  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 1 cup fresh strawberries, diced
  • 1 cup fresh blueberries
  • 1 tablespoon granulated sugar
  • 1 teaspoon lemon juice

Instructions

  1. Stir the graham cracker crumbs with the melted butter and divide among six small jars, pressing to form a base.
  2. Beat the cream cheese with the powdered sugar and vanilla until smooth and fluffy.
  3. In a separate bowl, whip the heavy cream to stiff peaks, then fold it gently into the cream cheese.
  4. Toss the strawberries and blueberries with the granulated sugar and lemon juice and let them macerate for 10 minutes.
  5. Spoon a layer of the cheesecake filling over the crust in each jar.
  6. Add a layer of strawberries, then more filling, then a final layer of blueberries.
  7. Chill the jars in the cooler for at least 1 hour to set.
  8. Serve cold, straight from the jar, garnished with a few extra berries on top.
  9. No-bake cheesecake is a summer hero because it delivers all the creamy richness of the classic without ever turning on an oven. Layered into individual jars with red strawberries, white cream and blue berries, these little desserts capture the patriotic colors of a Fourth of July table and travel beautifully in a cooler to any backyard or lakeside celebration.
